Modern bakeries demand efficient production of great quality and flexibility. The perfect bread baked in a modern bakery oven needs exact control of:

  • Temperature
  • Air circulation
  • Humidity
  • Heat distribution

For optimum operation, gas and oil-fired ovens require sufficient chimney draught and the natural chimney draught is rarely sufficient.

The atmospheric pressure, the outside temperature, time of year and wind and weather conditions all influence the chimney’s ability to create draught. If the wind and weather conditions are poor, the oven’s control will compensate by using more energy. Unfortunately, this compensation will lead to uneven and unsatisfactory production results.

Heat recovery of hot flue gas

In many bakeries and other industries, hot flue gas is led directly out of the chimney even though the flue gas contains large amounts of energy. By using an exodraft heat recovery solution, this excess energy can be collected and reused for heating, thus saving money and protecting the environment.

exodraft‘s CHR is a compact air-to-water heat recovery unit with an integrated bypass function, which is specially designed to absorb energy from hot flue gas.

The CHR heat recovery system is available in two versions: One version for flue gas/ processed heat (CHR-P) and one version for steam-bearing flue gas (CHR-P-S).

The heart of the unit is the actual heat exchanger, which utilises the heat from the passing flue gas in an efficient way. The excess heat energy that cannot be utilised is automatically circulated around the heat exchanger via the system’s bypass function.

The entire system is easy and intuitive to control thanks to the EHC20 controller, which controls the bypass damper, central heating pump and mixing valves. This guarantees that the circulation only occurs when it is needed.
