Effective smoke control at an open grill – without compromising on design or the dining experience

At ÄNG, the Michelin-recognised restaurant located at Ästad Vingård in Halland, Sweden, the guest experience is at the very heart of everything. Gastronomy, sustainability and aesthetics come together in a holistic concept where nothing is left to chance. As part of the ambition to create optimal conditions for both guests and staff, a chimney fan from Exodraft has been installed.

The restaurant’s open grill is situated directly in the dining area, forming an active part of the architectural and culinary experience. This setup places particular demands on air quality and smoke control, as even minor disturbances can negatively affect the atmosphere. With the installation of an RSV450 chimney fan, stable and controlled chimney draught is ensured, efficiently removing smoke from the grill area – without compromising the ambience or indoor climate.

The solution contributes to a calm and pleasant environment where functionality and design work seamlessly together.

At the heart of the experience is Restaurant ÄNG – a Michelin-awarded restaurant offering a fully curated sensory journey. The Nordic cuisine is rooted in local produce and executed with innovation and technical precision. Every aspect of the restaurant’s surroundings is carefully designed, and even the smallest details are considered to uphold the highest standards of taste, service, and atmosphere.

Reliable and efficient solution, designed to ensure optimal chimney draught under all conditions

  • Efficient chimney fan adapted for open grill environments – The RSV450 chimney fan creates constant negative pressure and ensures that smoke and particles are directed straight out of the building – without spreading into the dining area.
  • Individual solution for each grill – The system is installed across both floors of the restaurant, with one chimney fan per grill – optimised for both the Koopa grill and the built-in Marone grill.
  • Simple and integrated control – Integrated with the restaurant’s KNX control system and operated via intuitive Crestron panels, allowing kitchen staff to easily adjust the draught as needed.
  • Robust design for demanding conditions – The RSV450 is made of acid-resistant stainless steel and designed to withstand high temperatures.
  • Stable operation and improved indoor climate – Ensures constant and reliable smoke control, creating a pleasant working environment and an optimal experience for guests – without technical complexity.

Where gastronomy meets sustainability

The installation of the chimney fan was carried out as an integrated part of the restaurant’s existing design and technical infrastructure. Through close collaboration with ÄNG’s technical team, we ensured that the solution was adapted to meet both aesthetic and functional requirements – without interfering with daily operations or guest experience.

Since commissioning, the RSV450 chimney fan has delivered exactly the level of draught control required to keep the air in the dining area free of smoke – even during intensive use of the open grill. This has led to a noticeable improvement in the working environment for staff, and an even more complete experience for guests.

The solution supports ÄNG’s overarching ambition to combine gastronomic excellence with sustainable and comfortable surroundings – and demonstrates how technical systems can play a discreet yet critical role in premium restaurant operations.
